- Line a baking sheet with parchment paper and set aside for later use.
- Peel the bananas and slice them into ½ inch thick rounds. Arrange the slices in a single layer on the prepared baking sheet.
- Place the baking sheet in the freezer and chill the banana slices for at least 30 minutes until firm to the touch.
- Combine the chocolate and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring thoroughly between each interval, until the mixture is completely smooth and glossy. Alternatively, melt over a double boiler, stirring constantly.
- Using a fork or toothpick, carefully dip each frozen banana slice into the melted chocolate. Lift and allow any excess chocolate to drip off before transferring back to the parchment-lined sheet.
- Immediately sprinkle the chocolate-coated bites with your choice of toppings while the chocolate is still wet, ensuring even coverage.
- Return the tray to the freezer for at least 15 minutes or until the chocolate coating is completely firm and set.
- Serve the banana bites directly from the freezer. Store any leftovers in an airtight container in the freezer for up to 2 weeks.
