01 - Place grated potatoes in a clean kitchen towel and firmly squeeze to remove moisture.
02 - In a large mixing bowl, combine potatoes, carrot, onion, corn kernels, flour, breadcrumbs, cheddar, salt, black pepper, paprika, and garlic powder.
03 - Add the egg to the mixture and stir thoroughly until well combined.
04 - Form the mixture into small bite-sized patties, each approximately 2 tablespoons in volume.
05 - Pour vegetable oil to a depth of 1/2 inch in a large skillet and warm over medium heat.
06 - Fry patties in batches for 2 to 3 minutes on each side or until golden brown and crisp.
07 - Remove patties with a slotted spoon and drain on paper towels. Serve immediately with preferred dipping sauce.
