01 - Preheat the oven to 350°F. Grease and line a 9x5 inch loaf pan with parchment paper.
02 - In a large bowl, whisk together flour, baking powder, baking soda, salt, and pepper.
03 - In a separate bowl, beat the eggs, then whisk in milk, yogurt, and olive oil until smooth.
04 - Add the wet mixture to the dry ingredients and stir gently until just combined.
05 - Gently fold in Gruyère, Parmesan, chives, parsley, thyme, and if desired, olives and sun-dried tomatoes without overmixing.
06 - Pour batter into the prepared loaf pan and smooth the surface evenly.
07 - Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
08 - Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely prior to slicing.
