Homemade Raspberry Gummy Snacks (Printable Version)

Chewy fruit-based gummies made with fresh raspberries, natural sweetener, and gelatin for a wholesome homemade treat.

# What You'll Need:

→ Fruit Base

01 - 1½ cups fresh or frozen raspberries (about 6.3 oz)
02 - 2–3 tablespoons honey or maple syrup, adjusted to taste
03 - 1 tablespoon freshly squeezed lemon juice

→ Gelling Agent

04 - 3 tablespoons unflavored gelatin powder (substitute agar-agar for vegetarian version)
05 - ½ cup cold water

# How to Make It:

01 - Combine raspberries and lemon juice in a small saucepan. Heat over medium heat for 3–4 minutes until the berries break down and release their juices.
02 - Purée the mixture using an immersion blender or standard blender until smooth. Optionally strain through a fine mesh sieve to remove seeds for a smoother texture.
03 - Return the purée to the saucepan. Add honey or maple syrup and stir until fully incorporated.
04 - Sprinkle gelatin powder over cold water in a small bowl. Let stand for 2 minutes to allow the gelatin to bloom and absorb the liquid.
05 - Gently warm the raspberry mixture over low heat. Add the bloomed gelatin and stir constantly until fully dissolved. Do not allow the mixture to boil.
06 - Pour the liquid into silicone gummy molds or a parchment-lined baking dish. Smooth the surface with a spatula if necessary.
07 - Refrigerate for at least 45 minutes or until the gummies are firm and fully set.
08 - Pop gummies out of the silicone molds or cut into bite-sized squares if using a baking dish. Store in an airtight container in the refrigerator for up to 1 week.

# Expert Insights:

01 -
  • These taste like concentrated raspberry candy but are made with actual fruit you can feel good about eating.
  • They come together in minutes and the hardest part is waiting for them to set in the fridge.
02 -
  • Gelatin that is not fully dissolved will leave rubbery lumps in your gummies, so stir patiently over low heat until the liquid is completely clear.
  • Agar agar works as a vegetarian substitute but it sets much firmer and faster, so follow the package ratios rather than swapping one to one.
03 -
  • Use a light colored silicone mold for your first batch so you can see air bubbles and uneven filling more easily.
  • A small funnel or a liquid measuring cup with a pour spout makes filling molds dramatically less messy.
