01 - Heat 2 tablespoons olive oil in a large skillet or wok over medium-high heat. Add chicken strips and cook 5-6 minutes, stirring occasionally, until golden and cooked through. Remove chicken and set aside.
02 - Add remaining 1 tablespoon olive oil to the pan. Add onion, bell pepper, and zucchini. Stir fry for 4-5 minutes until vegetables are just tender.
03 - Add minced garlic and dried oregano; stir for 30 seconds until fragrant.
04 - Return chicken to the pan and toss everything together for 1-2 minutes until heated through. Season with salt and pepper to taste. Serve immediately, garnished with fresh parsley and lemon wedges if desired.
