01 - In a medium bowl or large jar, combine oats, milk, Greek yogurt, chia seeds, honey, vanilla extract, and salt. Stir thoroughly until fully incorporated.
02 - Gently fold in the diced fresh strawberries until evenly distributed throughout the mixture.
03 - Cover the bowl or jar securely and refrigerate for a minimum of 6–8 hours, preferably overnight, to allow oats to soften and flavors to meld.
04 - Before serving, stir the oats thoroughly. If the mixture appears too thick, add a small splash of milk to achieve desired consistency.
05 - Portion the overnight oats into serving bowls or jars. Top with additional sliced strawberries, chopped nuts, or shredded coconut as desired. Serve chilled.
