Ube Rice Krispie Treats (Printable Version)

Chewy purple bars with nutty ube flavor, melted marshmallows, and crispy rice cereal. An easy colorful twist on a classic treat.

# What You'll Need:

→ Base Mixture

01 - 6 cups crispy rice cereal
02 - 4 cups mini marshmallows
03 - 1/4 cup unsalted butter
04 - 1/3 cup ube halaya (purple yam jam)
05 - 1/2 teaspoon ube extract

→ Optional Topping

06 - 2 tablespoons white chocolate chips, melted
07 - 1 tablespoon toasted coconut flakes

# How to Make It:

01 - Lightly grease a 9x9-inch baking pan with butter or coat with nonstick cooking spray to prevent sticking.
02 - Place butter in a large saucepan over low heat. Once melted, add mini marshmallows and stir continuously until completely melted and smooth.
03 - Add ube halaya and ube extract to the melted marshmallow mixture. Stir thoroughly until fully combined and the mixture achieves a vibrant purple color throughout.
04 - Remove saucepan from heat immediately. Pour in crispy rice cereal and fold gently with a spatula until all pieces are evenly coated with the purple marshmallow mixture.
05 - Transfer the mixture to the prepared baking pan. Using a greased spatula or sheet of wax paper, press the mixture firmly and evenly into the pan corners.
06 - If using, drizzle melted white chocolate over the surface and immediately sprinkle with toasted coconut flakes while still warm.
07 - Allow treats to cool completely at room temperature for at least 1 hour. Cut into 16 equal squares using a sharp knife.

# Expert Insights:

01 -
  • The nutty, vanilla flavor of ube transforms plain cereal treats into something extraordinary
  • That vibrant purple color makes people genuinely excited before they even take a bite
  • They come together in 20 minutes but look like you spent way more effort on them
02 -
  • Low heat is non negotiable here because high heat will scorch the ube and turn your beautiful purple mixture an unappetizing brown
  • Work quickly once you add the cereal because ube makes the marshmallow mixture set up faster than regular treats
  • These are best eaten within 2 days because the moisture from the ube halaya can make them get slightly soft after that
03 -
  • Butter your hands or the back of a measuring cup to press the mixture into the pan without sticking
  • Use a sharp knife sprayed with cooking spray to get clean cuts that do not drag and squish the treats
