# Expert Insights:

01 -
  • One head of garlic transforms into something creamy and spreadable that tastes nothing like raw garlic, making it feel like a secret ingredient.
  • It's genuinely hard to mess up, and the smell filling your kitchen is basically aromatherapy.
02 -
  • Don't skip the cut on top of the garlic head, it's what lets the oil and heat reach the cloves directly and makes them sweet instead of just soft.
  • The moment you notice the tops turning golden brown, that's your signal to pull it out, because a little extra time makes the difference between creamy and slightly bitter.
03 -
  • If you're roasting multiple heads at once, they'll all be ready at the same time and give you plenty to use throughout the week in different dishes.
  • Room temperature roasted garlic spreads more easily on bread, so pull it from the fridge a few minutes before serving it as a condiment.
